Cherry tomatoes are bright, incredibly juicy and deliver intensely sweet, almost candy-like flavor when they are in the height of their season. This sweetness is balanced with the deep rich spices, like those in our jollof spice mix. Serve these over sourdough toast with sour cream or mozzarella, rice, potatoes, pasta or use as a dip. You'll love them.
Note: You can use Ekaterra spices on anything, we just happen to prefer using them on plants.
Jollof Baked Cherry Tomato
Jollof rice is a popular dish across West Africa and the spices used to create it have many applications. Take your cherry tomatoes up a notch using our Ekaterra jollof spice mix with this super easy recipe that can be in enjoyed in so many different ways.
1lb cherry tomatoes
2 tbsp jollof mix
2 tbsp avocado oil (or any neutral oil)
Salt to taste
1 tbsp lemon juice (optional)
Preheat an over to 400F
Place cherry tomatoes in an oven safe baking dish and add the oil, jollof mix and salt. Toss the tomatoes to ensure they are thoroughly coated.
Place in the oven and bake for 20 - 25 minutes. Remove from the oven when done and sprinkle over some optional lemon juice (to cut the acidity of the tomatoes)
Serve on top of slices of sourdough bread with a cream cheese, over rice, with potatoes or with pasta with some fresh basil leaves
