Who doesn't love potatoes? They are such an easy staple ingredient that can be prepared in numerous ways. Infusing potatoes with some West African spices is a great way to mix a familiar ingredient with new flavors.

Ingredients
½ lb golden peewee potatoes (cut in half if they are large)
Wash and dry the potatoes - leave the skin on - and cut them in half if they are large.
Place the potatoes, sliced onion, avocado oil, Pepper Soup Spice mix and salt to a large bowl and toss everything together to ensure the potatoes are coated in spices.
Place the potatoes in a single layer on a baking sheet (arrange cut side facing down if they were halved). Place the baking sheet in the oven and bake for 25 - 30 minutes, until the potatoes are golden brown and tender. Turn them once with a spatula halfway through baking time.
Remove from the oven, transfer to a serving dish then toss with chopped chives and parsley and serve
