A wide variety of potatoes are in season and baking is one of the many ways to prepare them. Elevate your potatoes with Pepper Soup Spice, a mix used to prepare a traditional spicy broth-based soup that can be used for so much more.
Note: You can use Ekaterra spices on anything, we just happen to prefer using them on plants.
Pepper Soup Spiced Pee Wee Potatoes
Who doesn't love potatoes? They are such an easy staple ingredient that can be prepared in numerous ways. Infusing potatoes with some West African spices is a great way to mix a familiar ingredient with new flavors.
½ lb golden peewee potatoes (cut in half if they are large)
1 small yellow onion, cut in half and sliced
¼ cup avocado oil (or other neutral oil)
1 tbsp Ekaterra Pepper Soup Spice
1 tsp sea salt
Fresh chives, for garnish
Fresh parsely, for garnish
- Preheat the oven to 420 degrees F
- Wash and dry the potatoes - leave the skin on - and cut them in half if they are large.
Place the potatoes, sliced onion, avocado oil, Pepper Soup Spice mix and salt to a large bowl and toss everything together to ensure the potatoes are coated in spices.
- Place the potatoes in a single layer on a baking sheet (arrange cut side facing down if they were halved). Place the baking sheet in the oven and bake for 25 - 30 minutes, until the potatoes are golden brown and tender. Turn them once with a spatula halfway through baking time.
Remove from the oven, transfer to a serving dish then toss with chopped chives and parsley and serve
