Nigerian Ginger is considered to be particularly medicinally potent and extremely high in oleoresin oil, which is desired in food manufacturing. This ginger, like most West African food, is naturally spicy with a heat that comes on quick and followed by notes of citrus. Its skin is much thinner, and therefore does not require peeling ensuring that all the nutrients in the ginger are retained during processing.
