Use: Add to homemade seasoning blends, salad dressings, soups, stews, stir-fries, boiled rice. Substitute for cardamom in pastries. Best used in raw applications, mildly flavored dishes and best added towards the end of cooking to retain its potency.

Alligator pepper (aframomum danielli) is a treasured spice in West Africa, used in cooking, as well as, in traditional ceremonies such the conferment of chieftaincy titles, naming ceremonies and presentation to special guests, to name a few. A member of the ginger family, but with warmer flavour tones, it is known by many names across the region from ósè ọ́jị́, atare, mbongo spice, bastard melegueta, red wesa to African cardamom. It is native to swampy habitats along the West African coast growing wild in Nigeria, Ghana, Guinea and Liberia and in Cameroon (West Central Africa). It is a close relative of the more popularly known Grains of Paradise (aframomum melegueta), but offers a hotter and more pungent flavour. This pepper offers moderate pepperiness with fragrant herbaceous notes.
